Choosing the right cake chiller isn't just about keeping things cold; it's about merchandising. It’s the difference between a customer saying, "I'll just have a coffee" and "Oh, I have to try that cheesecake."

1. Temperature vs. Humidity: The Science of Freshness

 

Not all cold air is created equal. Standard commercial fridges often strip moisture from the air, which is great for meat but terrible for cakes.

  • The "Goldilocks" Zone: Most cakes (especially those with fresh cream or fruit) need to be stored between +2°C and +8°C.

  • The Humidity Factor: You need a chiller specifically designed for cakes, often called a "ventilated pastry chiller." These maintain a higher humidity level (usually around 70-80%) so your sponge cakes stay fluffy and your fondant doesn't crack.
